Cashew Chicken

Serves - 3

Total Time - 20 minutes

Ingredients

Meat

  • 3 Whole boneless, skinless, chicken breasts

Marinade

  • 1 ts Salt
  • 1 ts Sugar
  • 1 TB Cornstarch
  • 1 TB Oyster Flavored Sauce
  • Dash of Pepper
  • Dash of MSG (optional)

Sauce

  • 1/4 cup chicken broth (1 bullion cube + 1/4 cup water, heated in microwave until dissolved)
  • 1/2 ts Salt
  • 1 ts Sugar
  • Dash of MSG (optional)

Other

  • 1 Cup of Cashew Nuts
  • 1 Cup of Chopped Celery
  • 1 Cup Chopped Vegetables such as Mushrooms, Green Onions, Onions, Water Chestnuts, or more Celery
  • 2 TB vegetable oil

Preparation

  1. Prepare Marinade, and Vegetables and place in separate bowls.
  2. Cut chicken into 1" x 1 & 1/2 " cubes and let soak in marinade.
  3. Add 1 TB oil to hot wok, and stir fry cashews and vegetables while you prepare the sauce.
  4. Remove the cashews and vegetables and place in bowl.
  5. Add 1 TB oil to wok, and cook chicken for 5 minutes.
  6. Add sauce and cook an additional 5 minutes or until chicken is fully cooked.
  7. Add cashews and vegetables, and cook for one minute.
  8. Remove from wok and serve over rice, or alone. 
  9. Add additional cashews if desired.

  • Surprisingly good the first time I made it.  Very easy and quick.
