Ham Fried Rice

Serves - 2 - 3 people

Total Time - 15 minutes or less.

  • This recipe is very simple, but it takes more experimenting than anything to get it right.  Experiment with various amounts of soy sauce, vegetables, meat, cooking time, etc. until you find what you like best.  I'll give a basic idea of the ingredients, but you really have to try this out several times until you find the best way to make it.

Ingredients

  • 4 cups of cooked white rice.
    • The rice should be cooked previously, and allowed to cool completely in the refrigerator, ideally overnight.
  • 1/2 pound of ham
  • 1/4 cup chopped onions
  • 1 cup of  of chopped/sliced carrots, celery, lettuce, or other vegetables that you like with fried rice.
  • 2 - 3 eggs
  • 1/8 teaspoon ground ginger
  • 1/2 cup Kikoman soy sauce

Preparation

  1. Take rice out of refrigerator, and break grains apart.  Set aside.
  2. Heat wok to around 300 degrees.  Pour in a tablespoon or two of oil.
  3. Slice ham into small cubes, and cook in wok for a few minutes.  Push to side of wok.
  4. Add onions and other vegetables, and allow to cook for a few minutes, then push to side of wok.
  5. Scramble the eggs in a cup, and add to wok.  Break apart the eggs into small chunks while they cook.
  6. Sprinkle ginger over ham, eggs, & vegetables.
  7.  Add a few more tablespoons of oil and add rice then soy sauce.  Allow to fry for several minutes, stirring thoroughly every few minutes.  Let cook & add more soy sauce until desired taste is achieved.
  8. Serve
